Convection heats air and pulls it through your material, which gives even extraction and better flavour at the cost of complexity and price. Conduction heats the chamber walls and the material touching them, which is faster, simpler and cheaper but heats unevenly unless you stir. Most modern devices are somewhere in between. Here is how each works, what each does well, and how to work out which method your own device uses.
